Bananas, oats, peanut butter… (+ applesauce and dark chocolate but I couldn’t fit them into the name) ?
Based on one of my favorite recipes from #bluezoneskitchen – the Loma Linda chapter!
I add peanut butter for some extra protein, a splash of vanilla and a sprinkle of salt to enhance all the flavors and use 70% dark chocolate chips.
I’m often weary of breakfast cookies because they usually contain so much sugar.
Balanced with complex carbs, protein, and fiber these are a fantastic start to the day or as a pre-workout snack!
I have to mention, you can bake these up in no time and for less than 30 cents a cookie!
I always have a batch on hand to start the week!
• Let’s bake! •
3 large mashed bananas
1/4 C unsweetened applesauce
1/8 C natural peanut butter
1 t. Vanilla
1/2 t. Salt
2 cups quick cooking oats
1/3 C. Dark chocolate chips
• combine all ingredients, use a large cookie scoop to place balls on parchment lined baking sheet, flatten slightly as these won’t spread, bake for 20 minutes!
• I enjoy mine with a cup of coffee and a light slather of some more peanut butter! ?SS
